Winter is coming… oh wait it is here! With the cold weather upon us I've been in complete hibernation mode often times negotiating with myself to get my behind to the gym
(I always feel better when I go!). There is nothing I crave more in fridgid temps than a delicious bowl of soup. I've been busy in the kitchen recipe testing some of my favorite macro friendly soups. This one was so delicious I have already made it twice!
Serves 6: Cals 242
1.6kg Fresh Red Pepper (About 10 sm/ medium sized peppers)415g Hunts No Salt Added Diced Tomatoes with Basil, Garlic and Oregano (1-14.5oz can)
430g Jenni O Extra Lean Ground Turkey (1-16oz package)
450g Kitchen Basics Unsalted Chicken Stock (2 cups)
100g Simply Balanced Organic Quinoa (1/2 cup)
1 tsp Salt
1 tsp Basil
1 tsp Fennel Seed
½ tsp Garlic
½ tsp Onion Powder
¼ tsp Red Pepper Flake
Brown Turkey Meat
Top with Parmesan cheese and fresh basil! Enjoy!
