Who else runs around all week like a maniac? Working full time (with a long commute), being a loving mama and CrossFit junkie I find my weeknights filled with chaos trying to fit it all in. Oh, not to mention I suppose I need to feed the family as well. With Fall approaching I find myself craving more comfort foods. Preparing comfort foods typically requires spending hours in the kitchen developing deep rich flavors that warm the body. But in all honestly, ain't nobody got time for that! Not only do these recipes only take 25 minutes in the oven but they also only require 1 baking sheet as well!!! Score! Less dishes!

This recipe was inspired by a meal my mom used to make in my childhood- her recipe included mayo and corn flakes- I lightened up my version by using plain Greek yogurt with Dijon mustard and using a protein packed fiber rich cereal.
