I don't know about you- but lately we have had party, after BBQ, after party to attend in the summer months. Just when I think we are off the hook with back to school- BOOM- Sunday Funday is back in action with Football season upon us. I was inspired to create some fun, bite-sized snacks that are good for home, on the go, or that next big party you're headed to. Not only are these friendly for your waistline, but they each took less than 15 min start to finish- yes really! I hope you enjoy these as much as my family did!

Buffalo Chicken Celery Boats
Makes 12- Serving Size (1)- Cals 19, Carbs 1g, Fat 1g, Protein 3
If you love Buffalo Chicken Dip you will LOVE these!
In a mixing bowl combine all ingredients except the celery until well incorporated. Divide the buffalo chicken mixture into the 12 celery ribs- Enjoy!!!
Mediterranean Pita Cups
Makes 12- Serving Size (1)- Cals 77, Carbs 6g, Fat 4.7g, Protein 3.7g
These are surprisingly substantial and filing- one goes a long way- although you probably won't be able to stop at just one!
Peach Cobbler Minis
Makes 12- Serving Size (1)- Cals 17, Carbs 3.4g, Fat .2g, Protein .3g
It's time for some sweets! My fave. A friend inspired this recipe in search of a Grit friendly recipe. These came out very tasty although I recommend not assembling until ready to eat as the rice cake softens while sitting.
